Nice catch! Love canned salmon. We can a lot of freshwater salmon up in MT. We sometime can smoked salmon too, pretty tasty! They are quite a bit smaller though (http://mthuntingandfishing.wordpress.com/2012/03/20/freshwater-salmon-fishing-bitterroot-lake-2010/).

Thanks DCM, I have never tried canning the smoked salmon we have. But now that you say that, what a good idea! Usually we freeze it, but I can see that it might save off some freezer burn if we don’t eat it fast enough 🙂
